On my iPhone 11 I play Skullgirls In the versus mode either in free for all or competitive mode me and my friend have a hard time joining each other while making a private match or even trying to get lucky and join each other in “find opponent” the main problem is that we can’t seem to connect to one another and be able to join. All it does it infinity load. We tried deleting it and downloading it back, logging out and logging back in, and we even tried making new accounts. Is there a way that this can be fixed

We plan to look into some known connection issues with Versus mode at some point for a future update.
For iOS there is a workaround that usually works, at least it does for me. You'll need to open Settings on your device, navigate to Privacy & Security, tap on Local Network and if you see Skullgirls mobile in that list, turn it off.
