I remember seeing this somewhere a couple months ago, but I really would like the option to edit our display/profile name because I signed up through my personal email and therefore have my real name on display.

I would definitely like this too.
The current way around this is to make a LINE account (it's a messager program used a lot in Asia) and set your username to whatever you want. Log in through LINE after that and your real name will be hidden.
LINE is the highest level account you can have, so your save file should be intact when you 'upgrade'.
