I just want to know what's the best thing I could use my theorite on since the hyper variety pack ended.

You get Hyperpack deals at levels 60 and 70 and some people also stated that you get them at levels 30 and 40.
Occasionally, when you evolve characters, you'll get a deal for Elemental Essences. 2000 theo for 3 essences, which is honestly pretty good. You can buy each type of essence only once per deal, so you can buy both fire and dark essences for example.
Apart from that, expanding your fighter and move sizes. The space you have right now will eventually simply not be enough.
And lastly you have 2 more options. Buy gold with Theo. The optimal deals reset every patch or so. And the other one being to save up Theo to buy Relics on a character's birthday.
10+1 relics on a character's birthday cost only 1000 theo, instead of 2000. So it's a great way to pile up on a certain character. You can find the characters' birthdays in the Wiki: https://skullgirls.fandom.com/wiki/Birthdays
