If I evolved a character all the way to dia, would it be possible to convert them to dia shards?

Yes, even Golds that evolved to Diamond can go through the Convert Diamond Fighter process.

Upon conversion, that Rerun Peacock would be reduced to 1 fire essence, 500 Peacock skill points, and 40 diamond shards.

I'd never do such a thing, but the option is there.
