I know it varies from character to character, but what exactly is the typical power ( or number ) a golden character has once the level maxes out. Also, could you still evolve a golden character or no?

Gold is the highest tier, so you can't evolve a gold character.
Characters that have evolved to gold from bronze or silver generally have lower fighter score than naturally gold characters. Naturally gold characters have usually between 6k-11k fighter score at level 50, while fighters that evolve to gold usually have 5k+ fighter score at level 50. It depends on the character because some characters have naturally higher fighter score than others. Keep in mind that the specials and blockbusters you have equipped can raise your fighter score if they have the appropriate stat boost, "ATK %". Also skills from the skill tree can raise your fighter score as well.
